Their mission is to provide homemade cooking from all over Mexico, especially the southern Mexican state of Chiapas. One of the most popular specials is the mole poblano: boneless and skinless chicken with a homemade mole made from thirty-eight ingredients. Alternatively, you can indulge in a gourmet burrito, large flour tortilla stuffed with a choice of cheese, slow-roasted shredded beef or chicken, beans, mild red ancho chile sauce, and spicy green tomatillo sauce.
